Ingredients:
Naan dough:
3 garlic cloves, peeled and minced
1 cup milk
1/2 cup whole-milk yogurt
1 tsp honey
1/2 tsp salt
1 package active dry yeast (about 2 1/4 tsp)
4 1/4 cups flour, plus more for dusting
Garlic butter:
4 tsp butter
2 garlic cloves, peeled and minced (about 2 tsp)
Instructions:
1. In a small saucepan over medium-low heat, toast garlic until tender and fragrant. Add milk, yogurt, honey, and salt. Heat until honey is dissolved (mixture shouldn't feel hot on the underside of your wrist.) Remove from heat, stir in yeast, and let stand until frothy (about 5 minutes).
2. Add flour to a stand mixer fitted with a dough hook or to a medium bowl. Create a well in the center of the flour to receive the liquid and add warm milk mixture. Mix until dough forms. If using a stand mixer, continue kneading for 5 minutes, until dough is smooth and pliable. If kneading by hand, turn dough out on a lightly floured surface and knead until smooth and pliable (about 5 minutes).
3. Lightly oil a medium bowl, add dough, cover with plastic wrap, and let rise in a warm place for 2 hours, or until dough as doubled in bulk.
4. After dough has finished rising, make garlic butter: In a small saucepan over medium heat, combine butter and garlic. Cook for 5 minutes, or until garlic is tender and butter is melted.
5. Preheat an 8" cast-iron skillet over medium-low heat.
6. Deflate dough and divide into 8 equal portions. Stretch each portion into a rough 6"-7" circle. Fry each circle in preheated skillet for 2 minutes on each side. Brush with garlic butter and serve warm with fresh cilantro, if using.
Makes 8 garlic naan.
