Here at Promise Valley Farm, we love making chocolate peppermint cookies using our milk! It is a tradition for Caroline to bake these delicious cookies for Christmas, and the kids especially love them. We've pulled out our recipe to share with you. (Perhaps it might become a tradition in your family, too, after they've melted so deliciously in your mouth! ;)
Without further ado, here is the recipe:
Ingredients
1 cup softened butter
1/2 cup cane sugar (we use Lockwood Farms' organic cane sugar)
1 cup packed yellow sugar
1/3 cup organic cocoa powder
2 eggs (Lockwood Farms also has non-GMO eggs!)
1 tsp vanilla
2 3/4 cup flour (we use One Organic Farm's organic all-purpose flour)
1 tsp baking soda
pinch of salt
2 cups mint chocolate chips
Instructions
1.In a bowl, mix first 6 ingredients until fluffy.
2. Add the flour, baking soda and pinch of salt into the bowl, and mix well.
3. Blend in 2 cups of mint chocolate chips.
4. Spoon dough into balls on to a floured cookie sheet and place in oven for 13 minutes at 375 degrees. Drop cookie tray to get the crinkle cookie look!
Don't forget to enjoy with a fresh glass of creamy Promise Valley milk!
