Recipe: Lemon Yogurt Cake

A customer sent this recipe for a lemon yogurt cake to us. We made the cake -- and promptly fell in love with it! This cake is oh-so-moist, the perfect sweetness, and is made with our very own organic lemon yogurt. After tasting it, we knew we had to share it with all of you. :)


And, without ado, the recipe!

The ingredients you'll need:
1 3/4 cup sugar
2 eggs (we used EcoEggs from Lockwood Farms)
1/2 tsp salt
3 tsp fresh lemon juice
2 lemons grated rind
3/4 cup oil
1 cup lemon yogurt (this is where our organic A2A2 yogurt comes in!)
2 cups self-rising flour (or 2 cups flour (such as One Organic all-purpose flour), 3 tsp baking powder, 1/2 tsp salt)

Directions:
1. In a bowl, mix the rind, oil, eggs and sugar with a fork.
2. Add the remaining ingredients and mix everything well together.
3. Pour batter into a greased ring tin and bake in the oven at 350 for 30-35 minutes or until toothpick comes out clean.

Leave to cool, then turn out and dust with icing sugar.
