These yogurt pancakes, from The Spruce Eats, are simply delicious -- especially when made with our organic, A2A2 cream-top yogurt!
If you love pancakes for breakfast, these pancakes are simply amazing! They're soft and fluffy, filled with protein, and packed with flavour! They're also very simple and quick to make (in about 10 minutes, making about 8-10 pancakes).
Ingredients
1 cup (120 g) all-purpose flour (we recommend One Organic Farm's all-purpose flour)
2 tablespoons granulated sugar (you can substitute organic cane sugar from Lockwood Farms)
1 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
1 cup plain yogurt (you could also use a different flavour, such as our vanilla yogurt, for a neat twist!)
2 large eggs (from Lockwood Farms)
2 tablespoons melted unsalted butter, or vegetable oil
1/4 to 1/3 cup whole milk, optional
Plus salted butter, maple syrup, honey, and/or jam (we recommend Mrs Jones Jams), for serving
Instructions
1.Gather the ingredients.
2. Heat a griddle or large frying pan over medium-high heat. Rotate it regularly to make sure it's evenly heated.
3. Once it's hot, turn down the heat to medium and keep that hot surface.
4. While the pan heats up, make the batter. Combine the flour, sugar, baking powder, baking soda, and salt in a medium bowl.
5. In another medium bowl, whisk together the yogurt and eggs.
6. Add the yogurt-egg mixture to the flour mixture and stir to combine.
7. Stir in the melted butter or oil. If the batter is too thick (which can happen based on the consistency of the yogurt that is used), slowly add 1/4 to 1/3 cup milk.
8. Brush or spray oil onto the hot griddle or pan. Spoon the batter into even cakes and cook until bubbles form on the surface of the pancakes.
9. Using a spatula, flip the pancakes over and cook until they are golden brown on the other side.
10. Transfer the pancakes to a platter or individual plates, and serve pancakes hot, with butter, maple syrup, honey, or jam as you like.
